If you're a mushroom fan like me, here's a pasta recipe you NEED to try!
Ingredients:
1 box of pasta (penne, spaghetti, rigatoni, etc.)
1 pack of mushrooms, sliced
1/2 cup heavy cream
a handful of parmesan cheese
basil (for garnish)
a tablespoon of butter or olive oil
salt & pepper
Begin by boiling a pot of water about 3/4 of the way full. This should take around 10 minutes.
While waiting for the water to boil, clean and slice your mushrooms. After this, place butter or oil in a large saucepan and let the mushrooms sauté through. If you really like the mushroom flavor, let them cook for around 15 or 20 minutes, while stirring occasionally.
Once the mushrooms have cooked, add the heavy cream to the saucepan. While stirring occasionally, this will form the base of the sauce!
Once the water has boiled, add your pasta of choice and stir until cooked to your liking (usually around 10-15 minutes)
Season the saucepan with sprinkles of salt and pepper and add a handful of parmesan cheese. The sauce should start to thicken at this point. Continue stirring for about 10-15 minutes.
Once your pasta is finished cooking, drain it using a strainer, but save about a cup of the pasta water (this will be used in the sauce)!
Rinse the pasta and add it to the saucepan along with about 1/2 a cup of the pasta water. Mix this through and you will see the pasta dish beginning to form.
Place on a plate and add some basil for garnish, and enjoy your meal!
